AKARA is a delicious snack and popular in the Yoruba tribe in Nigeria. It is also called KOOSE (or black-eyed pea fritters) in Ghana and ACARAJÉ in Brazil.

AKARA,
A DELICIOUS BREAKFAST FROM NIGERIA

In Nigeria it is usually served for breakfast with a bowl of Akamu (fermented corn pudding) and bread. It can also be eaten with hot sauce.

RECIPE

Ingredients:

  • 1 cup of beans (black-eyed or brown beans),
  • 2 habanero or chilli peppers,
  • 1 medium onion,
  • Salt to taste,
  • Vegetable oil or palm oil for frying.


Method

  • Pour the blended mixture into a bowl, salt to taste. Mix thoroughly for a few seconds to fluff up the mixture and set aside.
  • Pour the vegetable oil into a deep pot or frying pan; the oil should be deep enough to cover an egg, approx 3 inches deep.
  • Using a tablespoon, scoop the blended beans and drop gently into the hot oil.
  • Fry the Akara until brown and make sure you flip it over so that both sides brown at the same time.
  • Transfer the Akara into a sieve lined with paper towel, to help absorb excess oil.
