YASSA | Traditional simmer onion stew from Senegal. Made with carefully selected onions, carrots, green pepper and garlic, seasoned with Dijon mustard. Yassa is traditionally served with chicken or fish over rice or couscous.

DORO WAT | A mild spiced and spiced sauce originally from Ethiopia similar to the traditional tomato sauce. Made with carefully selected tomatoes, onions, ginger, garlic and berbere spices. Doro Wat is often served with the traditional Ethiopian bread called Injera.

SAKAY | HOT SAUCE / Exotic extra hot sauce originally from Madagascar for a similar use to the well-known Chimichurri sauce. Made with carefully selected hot peppers, ginger and garlic. Sakay is ideal for marinating meats and fish as well as salad dressings and many other dishes.

  • MAFFÉ | INGREDIENTS
    Water, tomato, onion, peanuts, cabbage, red pepper, sunflower oil, carrots, green pepper, yuca, salt, black pepper, meat extract and nététou.
  • YASSA | INGREDIENTS
    Onion, water, carrot, green pepper, sunflower oil, Dijon mustard, sugar, apple cider vinegar, salt, paprika, meat extract, black pepper, garlic and laurel.
  • DORO WAT | INGREDIENTS
    Water, onion, tomato, t’edj, sunflower oil, sugar, ginger, salt, white pepper, corn starch, berbere and garlic.
  • SAKAY | INGREDIENTS
    Extra virgin olive oil, ginger, garlic, smoked sweet paprika, dry hot chilli peppers and salt.

COOKING TIPS

  • MAFFE: We recommend that you brown meat, chicken or fish on a pan and then pour the MAFFE Mom Koumba sauce. Heat for a few minutes until it is at room temperature and it will be ready to pour over rice or semolina.
  • YASSA: We recommend that you brown meat, chicken or fish on a pan and then pour the YASSA Mom Koumba sauce. Heat for a few minutes until it is at room temperature and it will be ready to pour over rice or semolina.
  • SAKAY: You can use SAKAY Mom Koumba to marinate meat, chicken or fish but also as a hot sauce with potatoes. An exotic and very special “salsa brava”.
  • DORO WAT: Heat for a few minutes and it will be ready to pour on Injera (Ethiopian bread), it can also be eaten with rice, semolina or pasta. Before heating the DORO WAT sauce, you can brown meat, chicken or fish in a pan and pour the sauce over it.
