Have you ever heard of Egusi soup?

EGUSI SOUP, THE DELICIOUS TRADITIONAL SOUP OF NIGERIA AND GHANA.

This delicious and hearty soup is a traditional dish from West Africa, especially popular in Nigeria and Ghana.

Seeds of Egusi, also known as bitter melon, are the key ingredient in this soup. To make the soup, the egusi seeds are ground into a paste and combined with a flavorful tomato and onion base.

RECIPE

Ingredients:

  • 250 grams of Egusi seeds or pumpkin seeds
  • 1/2 kilogram of beef stew meat
  • 5 tomatoes
  • 1 small onion
  • 1 kilogram of fresh spinach
  • 1 teaspoon of salt
  • 1 teaspoon of sugar Cayenne pepper to taste
  • 100 milliliters of vegetable oil
  • 300 milliliters of water

Method

  • To prepare the soup, start by grinding the Egusi seeds into a paste and set them aside.
  • Next, blend the tomatoes, onion, salt, and water in a blender until smooth.
  • Heat the oil in a pot, add the beef and cook until browned on both sides.
  • Add the tomato and onion mixture to the pot, as well as the sugar and Cayenne pepper.
  • Cover and simmer for about 50 minutes.
  • Then, add the Egusi paste and spinach to the pot and simmer for another 10 minutes.
  • Season to taste. Serve hot and enjoy!
