Harissa is a spicy sauce from North African origin, specifically from Tunisia. It is a key ingredient in Maghrebi cuisine and is used in a variety of traditional dishes. Harissa is a mixture of dried red peppers, garlic, salt, and olive oil, and often also contains cumin and coriander. It is a very versatile sauce and the amount of dried red peppers can be adjusted to make it more or less spicy according to personal taste.

It is mainly used as a condiment for meats and fish, as well as for vegetables and salads. It is also used as an ingredient in sauces and soups. In Tunisia, harissa is used to season dishes such as couscous and tagine. In Moroccan cuisine, it is used to prepare kefta, a spicy meatball dish.

Harissa has become very popular worldwide, especially in recent years, and can now be found in many supermarkets and specialty food stores. It is an excellent option to add a spicy and complex flavor to any dish and is perfect for those looking to add a little adventure to their cooking.

RECIPE

Ingredients:

  • 100 grams of dried chili peppers
  • 3 garlic cloves
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • 1 tablespoon salt
  • 1 tablespoon fresh lemon juice
  •  1/2 cup olive oil

Method:

  1. Soak the dried chili peppers in hot water for about 30 minutes, until they are soft.
  2. Drain the peppers and remove the seeds and stems.
  3.  In a food processor, mix the soaked peppers, garlic cloves, ground cumin, ground coriander, and salt. Process until a paste forms.
  4. Add the lemon juice and olive oil. Mix well.
  5. Transfer the harissa to a sterilized glass container and store in the refrigerator for up to 2 weeks.

Done! You now have your own homemade harissa to add a spicy kick to your dishes. Remember that the amount of chilies and spices can vary according to your taste preferences and spice level.
